  • 2 small heads or one very large head of broccoli, chopped into small bite-sized florets
  • ¼ cup sliced almonds
  • ¼ cup dried fruit such as cherries, cranberries or blueberries
  • ¼ cup pumpkin or sunflower seeds
  • ¼ chopped cilantro

For the Dressing:

  • ¼ cup olive oil
  • 2 tbsp While My Za'atar Gently Weeps Middle Eastern Spice Blend
  • 2 tbsp maple syrup
  • 3 tbsp pomegranate vinegar (or balsamic)
  • a pinch of red pepper flakes
  • 1 tsp sea salt

Directions

  1. In a small mixing bowl add the dressing ingredients together and whisk until well combined.
  2. In a large bowl, add the broccoli florets, raisins, almonds, seeds and cilantro.
  3. Add the dressing on top and toss until each piece of broccoli is coated with the dressing;add more salt if needed.
  4. Serve as a side or enjoy as a delicious lunch salad.
