This recipe is in my permanent weeknight meal rotation because it’s so incredibly mouth-watering. It’s a take on a Kitchn recipe that omits the chicken and uses only the sweet potato. Good thing to keep in mind if you are vegan. This recipe is bright, tasty, and surprisingly light.

Vibrant color and flavor

We love this spice blend. In addition to traditional Spanish recipes like Paella, I've sprinkled this spice blend as a finishing touch on deviled eggs and avocado toast with a pinch of Healthy on You's Saffron and Winding Road sea salt blend. There is something so amazing about the smokiness of this You're so Spain blend. That is definitely one of the distinguishing features and it is truly wonderful!
