  • 2 large eggs
  • 1 small avocado, diced
  • 2 thick slices fresh sourdough bread
  • 1 tbsp While My Za’atar Gently Weeps Middle Eastern Spice Blend, divided
  • 2 tbsp green onions, finely chopped
  • 2 tbsp fresh dill, finely chopped
  • 2 tbsp fresh parsley, finely chopped
  • 2 tbsp Boursin cheese (herb & garlic flavor)
  • Sea salt and freshly ground black pepper

Directions

  1. Boil the eggs: Place eggs in a small saucepan and cover with water. Bring to a boil, then lower heat and simmer for 8 minutes and 30 seconds. Transfer eggs to an ice bath to cool completely. Once cool, peel and roughly mash with a fork in a small bowl.
  2. Mix the filling: Add diced avocado, green onions, dill, parsley, and ½ tablespoon of the While My Za’atar Gently Weeps spice blend to the eggs. Gently mix until well combined but still chunky. Season with salt and pepper to taste.
  3. Assemble the toasts: Toast sourdough slices until golden. Let cool slightly, then spread 1 tablespoon Boursin cheese on each slice.
  4. Top and finish: Spoon the egg-avocado mixture over the toast. Sprinkle with the remaining ½ tablespoon of za’atar blend, plus additional salt and pepper if desired.
