You're So Spain Refill
Savory Spanish Blend

- 4 large organic eggs
- 2 tbsp olive oil
- 4 garlic cloves, sliced
- ⅛ tsp red pepper flakes
- 2 cups cherry tomatoes, halved
- 1 tbsp You're So Spain Savory Spanish Spice Blend
- ½ cup water
- ¼ cup crumbled feta
- 2 tbsp parsley, chopped for garnish
- ½ tsp sea salt
Directions
- Heat a non stick skillet over medium-high heat and add the olive oil. When hot, add the garlic and red pepper flakes and reduce the heat to medium to avoid burning garlic; cook for 2 minutes.
- Add the tomatoes, You're So Spain Savory Spanish Spice and sea salt. Stir the ingredients all together and allow to cook for 5 minutes; add the water and reduce the heat to low and cover. Cook for 15 minutes until the tomatoes become nice and jammy.
- Crack each egg, one at a time into a small bowl. Uncover the tomatoes and one by one add the egg around the pan. Cover and allow to cook for another 2-3 minutes, checking half way to make sure the eggs don't over cook and set.
- When cooked, sprinkle with the feta cheese and parsley and serve hot.
- To make this a dinner you can start with ground meat in the pan at step one, adding 1 lb to the olive oil; then follow along with the garlic, pepper etc.
