While My Za'atar Gently Weeps Refill

For the Pita Chips:
- 2 large pitas, split into 4 thin rounds
- ¼ cup olive oil
- 2 tbsp While My Za’atar Gently Weeps Middle Eastern Spice Blend
- ¼ cup prepared hummus
For the Slaw:
- 1 cup red cabbage, thinly sliced
- 1 cup savoy cabbage, thinly sliced
- 2 tbsp fresh mint, chopped
- ¼ cup crumbled feta cheese
- 10 pitted kalamata olives, halved
Slaw Dressing:
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- 1 tsp While My Za’atar Gently Weeps Spice Blend
- Sea salt and freshly ground black pepper, to taste
Directions
- Preheat the oven to 400°F (200°C).
- Arrange the 4 pita rounds flat on a baking sheet. In a small bowl, whisk together the ¼ cup olive oil and 2 tablespoons of While My Za’atar Gently Weeps spice blend.
- Using a pastry brush, evenly coat the top of each pita round with the za’atar oil mixture.
- Bake for 10–12 minutes, or until crispy and golden. Remove from oven and let cool, then break into chips.
- Meanwhile, prepare the slaw: In a medium bowl, combine the red cabbage, savoy cabbage, and chopped mint,
- In a separate small bowl, whisk together the slaw dressing: olive oil, lemon juice, 1 teaspoon of za’atar, and salt and pepper. Pour over the cabbage mixture and toss to combine.
- Assemble the nachos: Arrange pita chips on a serving platter. Add dollops of hummus throughout, then spoon the slaw mixture on top. Finish with sprinkling the feta and olives. Enjoy!
