For the Pita Chips:

  • 2 large pitas, split into 4 thin rounds
  • ¼ cup olive oil
  • 2 tbsp While My Za’atar Gently Weeps Middle Eastern Spice Blend
  • ¼ cup prepared hummus

For the Slaw:

  • 1 cup red cabbage, thinly sliced
  • 1 cup savoy cabbage, thinly sliced
  • 2 tbsp fresh mint, chopped
  • ¼ cup crumbled feta cheese
  • 10 pitted kalamata olives, halved

Slaw Dressing:

  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp While My Za’atar Gently Weeps Spice Blend
  • Sea salt and freshly ground black pepper, to taste

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the 4 pita rounds flat on a baking sheet. In a small bowl, whisk together the ¼ cup olive oil and 2 tablespoons of While My Za’atar Gently Weeps spice blend.
  3. Using a pastry brush, evenly coat the top of each pita round with the za’atar oil mixture.
  4. Bake for 10–12 minutes, or until crispy and golden. Remove from oven and let cool, then break into chips.
  5. Meanwhile, prepare the slaw: In a medium bowl, combine the red cabbage, savoy cabbage, and chopped mint,
  6. In a separate small bowl, whisk together the slaw dressing: olive oil, lemon juice, 1 teaspoon of za’atar, and salt and pepper. Pour over the cabbage mixture and toss to combine.
  7. Assemble the nachos: Arrange pita chips on a serving platter. Add dollops of hummus throughout, then spoon the slaw mixture on top. Finish with sprinkling the feta and olives. Enjoy!
