This fennel-forward spice blend, with its bright notes of orange, thyme, marjoram, and garlic, was made for elevating salmon to star status. Imagine a fillet of wild salmon, seasoned simply yet boldly, roasting atop a bed of tender fennel, juicy citrus slices, and fresh dill. As it bakes, the flavors mingle—zesty orange and lemon, sweet licorice notes of fennel, and a touch of herby magic—infusing the salmon with every irresistible bite.

Ingredient Graphic
  • 2 lbs.skinless, wild salmon fillet, center cut 3/4-1" thickness
  • 1 ⅓ tbsp Healthy On You® The Fennel Countdown Fennel Citrus
  • Blend, separated
  • 1 medium fennel bulb, sliced thin
  • 1 each blood and mandarin oranges, sliced
  • 1 lemon, sliced
  • ⅓ cup olive oil
  • ⅓ cup Fresh dill herb, plus more for garnish Kosher salt and fresh ground pepper to taste

Directions

  1. Preheat oven to 325˚F
  2. Season the salmon: sprinkle the entire salmon with 1 tbsp of The Fennel Season the salmon: sprinkle the entire salmon with 1 tbsp of The Fennel
  3. In a large baking dish, add the fennel, orange and lemon slices, and the dill; season with the remaining ⅓ tbsp of The Fennel Countdown.
  4. Add the olive oil and another dash of kosher salt to the mix and toss well.
  5. Place the whole salmon on top of the fennel and citrus. Roast in the oven for 25-35 minutes until the salmon is medium and is cooked through on the edges.
  6. Remove from the oven and transfer the salmon to a plate and gently break apart. Transfer the remaining contents of the baking dish to a serving platter.
  7. Top with the salmon pieces and garnish with dill and fresh pepper.
