The Fennel Countdown Refill
Fennel Citrus Blend

- 2 lbs.skinless, wild salmon fillet, center cut 3/4-1" thickness
- 1 ⅓ tbsp Healthy On You® The Fennel Countdown Fennel Citrus
- Blend, separated
- 1 medium fennel bulb, sliced thin
- 1 each blood and mandarin oranges, sliced
- 1 lemon, sliced
- ⅓ cup olive oil
- ⅓ cup Fresh dill herb, plus more for garnish Kosher salt and fresh ground pepper to taste
Directions
- Preheat oven to 325˚F
- Season the salmon: sprinkle the entire salmon with 1 tbsp of The Fennel Season the salmon: sprinkle the entire salmon with 1 tbsp of The Fennel
- In a large baking dish, add the fennel, orange and lemon slices, and the dill; season with the remaining ⅓ tbsp of The Fennel Countdown.
- Add the olive oil and another dash of kosher salt to the mix and toss well.
- Place the whole salmon on top of the fennel and citrus. Roast in the oven for 25-35 minutes until the salmon is medium and is cooked through on the edges.
- Remove from the oven and transfer the salmon to a plate and gently break apart. Transfer the remaining contents of the baking dish to a serving platter.
- Top with the salmon pieces and garnish with dill and fresh pepper.
