Mardi Gras is on the horizon, but you don’t need that as an excuse to make this amazing Creole Red Bean recipe. Skip the sausage and use whichever type of rice you have on hand to make this delicious dish complete. It was easy using the Instant Pot instead of cooking it on the stove. I simply added the beans, diced onion, garlic, celery, peppers, vegetable stock, and Healthy On You® House of the Rising Spice Creole Spice to the bowl, set it to Pressure Cook on high for 30 minutes and allowed it to depressurize for 30 minutes after it was finished. then added salt and pepper to taste. The beans were tender and the recipe was ready in half the time it would normally take to make. See the full recipe below.

  • 2 cups dried small kidney beans, rinsed
  • 2 tbsp Healthy On You® House of the Rising Spice Creole Spice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 medium celery stalk, diced
  • 1 red bell pepper, diced
  • 4 cups vegetable stock
  • parsley for garnish
  • salt and pepper to taste

Directions

YOU WILL NEED AN INSTANT POT PRESSURE COOKER

  1. Add all ingredients to the pressure cooker bowl and cover.
  2. Press the pressure cooker button and set the timer to 30 minutes.
  3. When finished, if you have the time, allow the pressure to release naturally for another 30 minutes to 1 hour.
  4. Season with salt and pepper and garnish with fresh chopped parsley.
  5. Serve with cooked rice.
