This is one of those salads that you will crave over and over again, It's flavorful with the Fennel Countdown and zesty from the oranges. It pairs well with the Milanese Chicken on our blog.

  • 4 cups fresh arugula
  • ¼ cup olive oil
  • 1 tbsp The Fennel Countdown spice blend
  • 1 tbsp runny honey
  • 2 tbsp orange juice
  • 2 naval oranges, supremed (segmented with skin, pith and side membranes removed-see note)
  • 2 small fennel bulbs, halved, cored, sliced thin; fronds saved for garnish
  • ¼ cup dill, chopped
  • ¼ cup cilantro, chopped
  • ¼ cup fresh mint, chopped
  • sea salt to taste

Directions

  1. Make the dressing: in a medium-sized bowl add the olive oil, orange juice, honey, Fennel Countdown spice blend and sea salt to taste; whisk until the ingredients are incorporated and then set aside.
  2. In the same bowl, add the arugula, sliced fennel, orange segments, dill, cilantro and mint.
  3. Toss with the dressing.
  4. garnish with chopped fennel fronds.

Note: to "supreme' the oranges- essentially making the fruit naked then cutting out slices of the fruit between the membranes-cut off the top and bottom of the orange so it sits flat on a cutting board. Pare the orange from top to bottom removing the thin outer membrane all around, then cut in between the membranes to remove the slices of fruit.

The za'atar strikes back in this amazing grilled salmon salad with fresh farmers market vegetables! I taught this fantastic recipe in our Healthy On You® online cooking class today and we had so much fun cooking together. I am still in awe of everyone cooking away in their own kitchens. It’s hard enough cooking sometimes, but having to keep up with me, well, that can be challenging. You have to do some prep work ahead of time but it is soooo worth it!
