Salad

  • 2 tbsp olive oil, divided
  • 12 oz halloumi cheese, sliced into 3-inch pieces
  • 1 small bunch kale, stems removed and roughly chopped
  • 2 medium yellow beets, boiled until fork-tender, skins removed and cut into wedges
  • 1 cup cooked chickpeas
  • 1 cup cooked lentils
  • ¼ cup pickled red onions
  • ¼ cup fresh cilantro, chopped
  • ½ tsp sea salt

Dressing

  • ½ cup olive oil
  • 1 tbsp While My Za'atar Gently Weeps
  • Zest of 1 lemon
  • Juice of ½ lemon
  • Sea salt and freshly ground pepper, to taste

Directions

  1. Massage the kale. In a large bowl, combine the chopped kale with 1 tbsp olive oil and ½ tsp sea salt. Massage with your hands for 1–2 minutes, until the leaves soften and turn a deeper green. Set aside.
  2. Sear the halloumi. Heat the remaining 1 tbsp olive oil in a skillet over medium-high heat. Add the halloumi slices and cook for 2–3 minutes per side, until golden and blistered. Remove from the pan and let cool slightly before slicing into bite-sized pieces.
  3. Make the dressing. In a small bowl or jar, whisk together the olive oil, While My Za'atar Gently Weeps, lemon zest, lemon juice, sea salt, and pepper until combined.
  4. Assemble. To the bowl of massaged kale, add the beet wedges, chickpeas, lentils, pickled onions, and cilantro. Pour the dressing over top and toss to coat.
  5. Finish. Top the salad with the seared halloumi and a final sprinkle of While My Za'atar Gently Weeps. Serve immediately.
