These protein-rich egg bites are bright and delicious with our Saffron and Winding Road sea salt. They freeze well and are great for breakfast on the run. Freeze in a single layer and when ready, microwave and enjoy!

  • 8 organic eggs
  • 1 cup cottage cheese
  • ½ tsp Saffron and Winding Road Saffron Sea Salt
  • ¼ cup Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • ¼ tsp black pepper

Directions

  1. Preheat the oven to 350˚
  2. Prepare a non-stick 13x9' muffin baking tray with olive oil (you can also line each opening with a cupcake liner.)
  3. In a high powered blender, add all the ingredients.
  4. Blend for 15-30 seconds until well combined
  5. Fill each opening ¾ to the top and bake for 12-15 mins until the center sets.
  6. Allow to cool for five minutes then refrigerate or freeze.
