These tasty cookies are the perfect snack when you are craving something sweet but also wholesome. The spiced peanut butter makes all the difference in these delicious little bites. They are perfect to make with the kids too! This recipe makes about 12 cookies.

Ingredient Graphic
  • ½ cup of your favorite nut butter (peanut, almond, etc)
  • 2 tsp Spice Spice Baby spice blend
  • ½ cup gluten-free oats
  • ¼ cup maple syrup
  • ¼ cup chopped pecans or walnuts
  • ¼ tsp baking soda
  • 1 tsp chia seeds
  • ⅛ tsp sea salt

Directions

  1. Preheat the oven to 350˚F; line a 9x13 baking sheet with parchment paper.
  2. In a medium-sized bowl, add the nut butter and Spice Spice Baby spice blend. Mix the spice and nut butter until smooth.
  3. Add the maple syrup, baking soda, sea salt and mix well.
  4. Add the oats, chopped nuts and chia seeds and stir all together until the mixture comes together.
  5. Using a cookie scoop, scoop 1½ tbsps of the mixture onto the baking sheet. Oil the back a spoon and gently press the cookie mixture to about 2 inches wide.
  6. Bake in the oven for 15-20 minutes until the edges are golden and start to crisp.
  7. Wait 5-10 mintutes before transferring to a cooling rack. The cookies will hold together better the longer they cool.
  8. Store at room temperature in an airtight container for up to 4 days or freeze up to one month.
