- 16 oz Orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cup marinated artichokes
- 1 cup mozzarella ciliegine, sliced in halves
- ½ cup parsley, finely chopped
- ½ tbsp Provence You've Been Gone Herbes de Provence
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- ½ tsp sea salt
Directions
- Cook the orzo pasta per the package instructions, drain and set aside.
- in a large serving bowl, add the orzo, tomatoes, marinated artchokes, mozzarella ciliegine and parsley.
- Add the olive oil, lemon juice, Provence You've Been Gone and sea salt.
- Toss well, taste for salt and adjust as needed.
