This is the perfect bring-along side dish to any BBQ or picnic this summer season. The fresh tomatoes, marinated artichokes and mozzarella ciliegine make this salad delightful along with our Provence You've Been Gone Herbes de Provence spice blend, of course!

  • 16 oz Orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup marinated artichokes
  • 1 cup mozzarella ciliegine, sliced in halves
  • ½ cup parsley, finely chopped
  • ½ tbsp Provence You've Been Gone Herbes de Provence
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • ½ tsp sea salt

Directions

  1. Cook the orzo pasta per the package instructions, drain and set aside.
  2. in a large serving bowl, add the orzo, tomatoes, marinated artchokes, mozzarella ciliegine and parsley.
  3. Add the olive oil, lemon juice, Provence You've Been Gone and sea salt.
  4. Toss well, taste for salt and adjust as needed.
