Savory Spanish Blend
Gazpacho
- 3 ears of corn, kernels cut off (reserve 1/3 cup for garnish)
- 1 large yellow heirloom tomato, chopped (or 2 medium)
- 1 yellow bell pepper, stemmed, seeded, and chopped
- 1 cup cucumber, peeled and chopped
- 4 tbsp extra-virgin olive oil, plus more for drizzling
- 2 tbsp sherry vinegar
- 1 1/2 tsp You're So Spain Savory Spanish Spice Blend
- 1/2 tsp sea salt, plus more to taste
- Freshly ground black pepper, to taste
Garnish
- 1/3 cup reserved corn kernels
- 1/2 cup cherry tomatoes, sliced
- 2 tbsp fresh cilantro, roughly chopped
- 1 tbsp extra-virgin olive oil, for drizzling
Directions
- CUT & RESERVE THE CORN: Cut kernels from corn ears over a large bowl to catch the juices — those juices are pure sweet corn flavor and go into the blender. Set aside 1/3 cup of kernels in a small bowl for garnish. This is a great knife skills moment — teach students how to safely cut corn off the cob standing it upright on a cutting board.
- BLEND THE GAZPACHO: In a blender, combine the corn kernels and juices, tomato, bell pepper, cucumber, olive oil, sherry vinegar, You're So Spain Spice Blend, salt, and pepper. Blend on high until very smooth, about 60 seconds. The spice blend goes in during blending so it fully incorporates into the soup.
- TASTE & SEASON: Taste the gazpacho and adjust seasoning — more salt, a splash more sherry vinegar for brightness, or a pinch more spice blend for depth. Teach students that cold dishes need more seasoning than hot ones.
- CHILL: Transfer to a bowl or pitcher and refrigerate until very cold, at least 1 hour. For the best flavor, chill overnight. The spices need time to bloom and meld in the cold soup.
- GARNISH & SERVE: Pour into chilled bowls or glasses. Top with reserved corn kernels, sliced cherry tomatoes, and a generous scatter of fresh cilantro. Finish with a light drizzle of olive oil and a tiny pinch of You're So Spain Spice Blend right on top for color and aroma. Serve immediately.
