  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • 2 tbsp You’re So Spain Savory Spanish Spice
  • 4–5 jarred sun-dried tomatoes in oil
  • 2 tbsp reserved oil from the sun-dried tomatoes
  • 4 cloves garlic
  • 3–4 fresh basil leaves
  • 1 tsp tomato paste
  • 1 tsp sea salt
  • ¼ tsp red pepper flakes
  • juice of 1 lemon
  • 2–3 ice cubes
  • olive oil, for garnish

Directions

  1. In a food processor, combine the beans, You’re So Spain spice blend, sun-dried tomatoes, reserved oil, garlic, basil, tomato paste, sea salt, red pepper flakes, and lemon juice.
  2. Process for about 20 seconds, then add the ice cubes one at a time, blending until smooth and creamy.
  3. Taste and adjust seasoning as needed.
  4. Transfer the dip to a serving bowl. Garnish with a drizzle of olive oil, a sprinkle of red pepper flakes, and a pinch of You’re So Spain spice blend.
  5. Serve with fresh bread, crackers, or vegetable sticks.

I love this recipe and tend to make it often throughout the seasons. It’s low in fat and keeps you full. I always keep frozen shrimp in the freezer and my pantry is usually stocked with a variety of beans.
