Roasted Carrots

  • 1 lb organic carrots, peeled and chopped on the diagonal
  • 3 cloves garlic, minced
  • 1 tbsp Super Greek spice blend
  • 1 tsp sea salt
  • ¼ tsp black pepper
  • Zest of 1 lemon

Salad

  • 1 cup cooked lentils
  • ¼ cup fresh dill, chopped
  • ¼ cup crumbled feta cheese
  • ¼ cup pistachio nuts, roughly chopped
  • ¼ cup pickled onions
  • 2 tbsp runny hot honey

Dressing

  • ½ cup olive oil
  • 1 tbsp Super Greek spice blend
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Sea salt and freshly ground pepper, to taste

Directions

  1. Roast the carrots. Preheat the oven to 400°F. On a baking sheet, combine the carrots, garlic, Super Greek spice blend, sea salt, and black pepper, tossing to coat evenly. Cover and roast for 25 minutes, then uncover and roast for another 15 minutes, until tender and caramelized. Remove from the oven and sprinkle with the lemon zest.
  2. Make the dressing. While the carrots roast, whisk together the olive oil, Super Greek spice blend, lemon zest, lemon juice, sea salt, and pepper in a small bowl or jar.
  3. Assemble. In a large bowl, combine the roasted carrots, cooked lentils, dill, feta, pistachios, and pickled onions. Pour the dressing over top and toss gently to combine.
  4. Serve. drizzle with the runny hot honey. Enjoy warm, at room temperature, or chilled.
