This is a festive, delicious and easy appetizer that bursts with flavor and is perfect for the holidays. It easily transforms to a vegetarian appetizer if you omit the bacon.

  • 1 -2 medium-sized long sweet potatoes, sliced into ¼ inch rounds, you should have 18-20 rounds.
  • 1 tbsp ghee or olive oil
  • ½ cup ricotta cheese
  • 1 large honey crisp apple, diced
  • 1 tsp Spice Spice Baby spice blend
  • 1 tbs maple syrup
  • 1 tbsp runny honey
  • 4 bacon strips, fried, crunchy and broken into bits (optional)
  • 2 tbsp dried cranberries
  • 2 tbsp pistachio nut meat, diced
  • 2 tbsp fresh parsley, chopped

Directions

  1. Brush each sweet potato round (front & back) with ghee or olive oil to prevent sticking.
  2. Air fry or bake the sweet potato rounds on 400˚F for 15-20 minutes until they begin to color and crisp. Be careful not to burn.
  3. While the sweet potatoes bake, make the spiced apple mix. In a medium sized bowl, mix the diced apples, maple syrup and Spice Spice Baby spice blend.
  4. Heat a skillet over medium heat and add the apple mixture to the dry pan. Sauté the apples until the soften and the liquid evaporates -3-5 minutes. Remove from the pan and set aside.
  5. When the sweet potatoes are finished and are stable and crisp, lay them on a serving tray and spread each round with a layer of ricotta cheese.
  6. Add a spoonful of the spice apples to each round and press down lightly with the back of the spoon so the apples stay put on the sweet potato. Sprinkle on the pistachio nuts, dried cranberries and bacon (if using.)
  7. Drizzle the runny honey all over the rounds in a zig zag formation covering each round with a few lines.
  8. Garnish with a sprinkle of the parsley and serve immediately.

Moroccan Spiced Baked Sweet Potato Chips

Za’atar-spiced Labneh Cheese

Labneh is a cheese found in middle east. It’s basically greek yogurt and salt and when the process is complete it has the texture of soft whipped cream cheese.
It’s simple to make a small batch of labneh cheese. If you have the time, it will save you the trip to your local middle eastern grocery store. There are many uses; a dip with fresh herbs or finished on a bagel with Healthy On You® While My Za’atar Gently Weeps spice blend.
