FOR THE HOMEMADE BBQ SAUCE

  • 1⅓ cup ketchup
  • ½ cup apple cider vinegar
  • ½ cup coconut sugar
  • 2 tbsp Healthy On You® Hit the Roast Jack Coffee Roast Rub
  • 2 tsp kosher salt

FOR THE BBQ CHICKEN

  • 8 pieces of chicken legs ad thighs, bone-in/skin on
  • 1 cup Homemade BBQ Sauce
  • kosher salt and pepper

Directions

MAKE THE BBQ SAUCE

  1. Combine all ingredients in a small saucepan, bring to a simmer over medium heat and cook for 5 minutes. Makes approximately 2 cups. Refrigerate unused portion.

MAKE THE CHICKEN

  1. Season the chicken generously with kosher salt and pepper.
  2. Thin 1 cup of BBQ sauce with ½ cup of water and set aside.
  3. Pre-heat gas grill to 350˚F. If using a coal grill, build a fire in your grill, leaving one side free of coals. When coals are covered with gray ash and the temperature is medium, you are ready to cook. This could take up to 20 minutes. Remember slow and low is best.
  4. For the coal grill: place the chicken pieces on the hot side of the grill and baste with the thinned BBQ sauce. When the chicken skin starts to crisp and darken move the pieces to the cooler side of the grill and turn. Baste again and let them cook for 20-30 minutes more. Remove from the grill when the internal temps are 160+ and the juices run clear.
  5. For the gas grill: place the chicken pieces on the grill and baste with the thinned BBQ sauce. Cook for 7-10 minutes, then baste and turn the burners down to low. Cook turning and basting occasionally for 30 minutes. Remove from the grill when the internal temps are 160+ and the juices run clear.
